Product Description:  gamma-Cyclodextrin is a ring-shaped molecule made up of eight glucose units linked by alpha-1,4-bonds. It is produced by the action of the enzyme, cyclodextrin-glycosyl transferase (EC 2.4.1.19) on hydrolysed starch syrups. Cyclodextrin-glycosyl transferases are amylolytic enzymes that are produced naturally by various strains of Bacillus and other organisms. The gene coding for the cyclodextrin-glycosyl transferase used for the manufacture of gamma-cyclo-dextrin was isolated from  Bacillus firmus and  Bacillus lentus (both of which are considered non-pathogenic) and cloned into a strain of Escherichia coli K12.
